How Is Your Taste for Yellow Foods?
By Tom Herrin
It is a standard theme that when trying to offer the best variety of foods for children, a lot of color should be the goal. Many people seem content once they have added something green. That is a good start, but it falls short of the kind of variety that can really enhance a diet. A good menu should include something yellow as well. Many of the orange vegetables are considered to be included in that yellow group due to their beta carotene and a few other things. Yellow foods have their own niche and should be introduced to children and continued as adults.
They Are Heart Healthy
Many yellow vegetables have the ability to lower bad cholesterol. This is because they contain soluble fiber that can help remove it from the blood. In addition, they can help to lower blood pressure. Some contain magnesium, which is known to help reduce the risk of stroke and heart attack. Since most yellow vegetables contain almost no fats and few calories, they can be something that people can feel good about loading up on.
They May Help Fight Disease
Like many other beneficial foods, many of the yellow vegetables are fairly high in antioxidants. This can boost the immune system as it fights quite a few common illnesses. It is also known to help fight some cancers. Adding more yellow vegetables, as opposed to white, can play a big role in the health of those individuals who are prone to problems with blood sugar.
They Are Simply Good
A lot of people seem to avoid putting yellow vegetables on their plate when given the choice. This may be due to the fact that they just don’t think about it. They are not really an acquired taste but one that people may not see often enough. I love to add them to my diet. Yellow squash is my favorite, prepared almost any way. They may be baked, boiled, or fried. Pumpkins and sweet potatoes are also considered to be on the yellow list. They have unique flavors and can add some great variety to a meal. If you are looking for something to improve your diet, think back to your yellow vegetables. Being from the south, you more than likely enjoyed them in the past but somehow may have forgotten just how good they can be.
