6 Healthy Quesadilla Recipes

By Brandi Goodman

National Quesadilla Day arrives near the end of September. Whether you choose to celebrate the special occasion only then or want to enjoy the food anytime you crave it throughout the year, there are some healthy options to choose from. Consider one of these six healthy quesadilla recipes and see if you have a new favorite.

Vegetarian Quesadilla

Start with whole wheat tortillas that offer several grams each of protein and fiber. Pack in black beans, corn, bell peppers, red onion, cilantro, cumin, and cheese for a boost in vitamins and minerals. This vegetarian quesadilla is colorful and flavorful.

Chicken Quesadilla

There are many chicken quesadilla recipes. Consider a basic option utilizing a whole wheat tortilla to start. Add baked chicken for protein topped with beans, tomatoes, and a bit of cheese for some flavor, fiber, and vitamins.

Avocado and Hummus Quesadilla

Avocado and hummus are a great combination. This health food option uses whole wheat tortillas. Stir together hummus, cilantro, and cumin to spice it up. Spread the hummus mixture on the tortilla and add sliced avocado on top. You can also add some queso for a cheesy taste.

Spinach and Tomato Quesadilla

Whole grain tortillas, mozzarella, tomatoes, spinach, and a vegetarian pesto are all you need to concoct this recipe. Spread the pesto first before topping the tortilla with layers of the other ingredients. This is a nutritional powerhouse packed with protein and vitamins.

Vegetarian Breakfast Quesadilla

Quesadillas aren't only intended for lunch or dinner. You can create a vegetarian breakfast option that starts your morning off right. Find some gluten-free tortillas to start. Beat eggs with coconut milk and seasonings of your choosing. Add in cilantro, red onion, black beans and tomatoes before cooking. You'll have a scrambled omelette ready to be added to your quesadilla meal. Top with avocado if you desire for even more nutrition. A drizzle of lime juice also pairs well with this option.

Blueberry Quesadilla

Ideal for breakfast or dessert, a blueberry quesadilla is a unique option you may not have considered. Blueberries are laden with antioxidants ideal for keeping the body free from disease and degeneration. All it takes is some low-fat cream cheese and blueberries for this easy treat.

Quesadillas can be made healthy so you gain nutritional value from the delicious meal. Skip the Taco Bell options and create a homemade quesadilla packed with healthy ingredients. It will hit the spot while working to boost your health.
